    # Dominique Riou:

    Dominique Riou - chocolate workshop - ArdècheWith the precision of a jeweller, Dominique Riou () creates divine delicacies in his workshop in Arcens () : chocolates filled with chestnut or spices, raspberry hearts... This chocolatier is clearly gifted. He is sought after by Régis Marcon (3 Michelin stars), who he has worked with for a few years.

    The avant-garde style shop in Le Cheylard () looks more like a jewellery shop than a confectionery shop. A pistachio coloured unit in the centre appears to float above the aniseed and mauve tiles. All around the unit there are displays of his creations, including marshmallows, spiced caramels and, best of all, memorable fruit jellies : blood orange, chestnut and blueberry (). They are not too sweet, fresh and balanced, including a deliciously aromatic verbena flavour. In this case it is a natural, peppery verbena, picked from his father’s garden...

    Joël Patouillard - chocolate workshop - ArdècheJoël Patouillard () was only seven when he knew would be a chocolate maker. Since then, his passion kept growing. He worked with the greatest chocolate makers such as Lenôtre. His chocolates and creations () are admired. In 1986, he was awarded ‘Meilleur Ouvrier de France’.

    As he is also generous, Joël invites you to discover his workshop (), his recipes and maybe his secrets.

    Pierre chauvet - chocolate workshop - ArdèchePierre Chauvet () has, like a master craftman from times gone by, been selecting the finest cocoa beans for over ten years. With a gourmet's enthusiasm, he chooses beans with full-bodied, fruity... and delicate flavours, and like an alchemist transform them into a connoisseur's delight. His house specialities, combining great classic flavours with top quality Ardeche produce, are intriguingly new

    His surprising Ardèche truffle celebrates a perfect marriage between chestnut cream, rich cocoa and chestnut biscuit. His Provençal thistle has typically Mediterranean fruit in praline; his pistachio and almonds in lavender blue,
    not to mention his Chocolate millefeuille (). These are all fascinating novelties, in their shapes and in the combination of different flavours and aromas. Dark, milk or white chocolate, full flavoured, subtle or creamy in turn; the fascinating flavours of fragant cocoa beans, bergamot tea, hazelnut, crisp lace filling... Just close your eyes and let it be a chocolate surprise.

    Jean-Claude Briet - chocolate workshop - Ardèche
    In the small town of Les Vans, Jean-Claude Briet () tells to anyone his chocolates were born thanks to meetings. Meetings he made in Santo Domingo or Venezuela, Africa or Asia or simply in Ardèche. He was trained with famous names such as Lenôtre. His saying is ‘the chocolate is like a symphony, it sings’! Then it is a combination of patience and passion to sculpt chocolate as imagined in his mind. He created unusual flavours such as the ‘Diamant des Cévennes’, in other words chestnut as well as Aubrac tea and from different mushrooms!

    In his shop (), he offers 150 chocolate varieties in total.
